Food is the only constant thing we introduce in our bodies on a daily basis— giving it the power to influence our normal physiology and biochemistry in a number of ways.

While its original purpose was to support the growth and function of the human body, it is now one of the major culprits for chronic diseases.

We have undermined what our diet can do to the human body. Allowing ourselves to be unaware of how it can even modify the anatomy of our intestines and brains.

We succumb to the aggressive marketing of the food industry, confusing us with a plethora of food choices. With our guards down and without being mindful of what we are absorbing into our system, we are granting it authority over our mental and physical health.

Perhaps, by enlightening ourselves with healthier options and intentionally planning our meals, we can be more in control of our health. We can lessen chronic diseases and reduce the need for pharmaceutical drugs. And maybe prevent future pandemics from happening.

Although there is no hard evidence (yet) that can claim that GFD promotes nutritional health benefits, there are a number of studies that cannot deny associations between GFD and alleviation of symptoms in autoimmune diseases. Most especially in Celiac Disease, Gluten Ataxia, Dermatitis Herpetiformis, and Type 1 Diabetes Mellitus.
